				<content:encoded><![CDATA[<p>Calling all brunch aficionados! Did you know that everyone’s favorite brunch-time beverage–likely because it also happens to be one of the best ways to perk up after a rough night out–was concocted by an American bartender named Fernand Petiot? That’s right, this brilliant man is responsible for creating the famous (and fabulous) blend of tomato juice and vodka that we’ve all grown to know and love, more commonly known as, <strong>The Bloody Mary</strong>.</p>
<p>This past weekend, I decided to visit <strong>Rockit Burger Bar</strong>–one of my favorite brunch spots in town. As always, it was buzzing with energy and filled with the sweet aroma of oh-so delicious fare. A few moments after my friends and I were seated, our waitress came by to take our drink order. Instead of simply calling out the interesting cocktails on the menu (and let me tell you, they had some seriously standout options!), she pointed us over to an enormous bloody mary bar with a ton of unique offerings like peppers, pickles, meats, cheeses, sauces, veggies and more. Each accompaniment had multiple types or versions, which made the combinations of ingredients endless, and need I say, AMAZING! The “build-your-own” bloody mary bar at Rockit Burger Bar is indeed one of the best in the city; nothing is left to be desired.</p>
<p>So, what more could I ask for? I mean, what could be better than creating your very own, one-of-a-kind delicious brunch beverage? I’ll tell you what: Rockit Burger Bar’s new <strong>Tomatillo Bloody Mary</strong>! Did I hear a “say what!?” This inventive cocktail, which puts a unique twist on the traditional bloody mary and consists of roasted tomatillos, roasted green tomato, jalapeno, fresh lime juice, a dash of cilantro and avocado is the best thing I’ve tried in years. The Tomatillo Bloody Mary is the perfect balance of spicy, tarty goodness with just the right amount of acid to compliment its exceptionally bold flavors. #YUM</p>
<p>Rockit Burger Bar’s brunch is offered every Saturday and Sunday from 10:30 a.m. to 4 p.m., and trust me, its one you don’t want to miss!</p>

				<content:encoded><![CDATA[<p>Bread. It’s simple, it’s common and it’s perhaps one of the most versatile staples of our kitchen. Sandwiches, burgers, croutons – think of all the dishes that would disappear if bread ceased to exist. French toast made with a tortilla, (I don’t think so) and the biggest casualty of all (dare I even say it)….a world without pizza. The horror.</p>
<p>Pizza is at its very essence, a flatbread with various toppings. Its origins are believed to be in Naples, Italy. The Neapolitans consumed this inexpensive food because it could be eaten quickly and allowed them to return to work sooner. Legend has it that Margherita Flatbread Pizza was named after the Italian royal Queen Margherita. During a trip to Naples and bored with her French cuisine, Queen Margherita requested the local delicacy and was served a mozzarella, tomato and basil flatbread. Whether it was the flavor or because the pizza highlighted the red, white and green of the Italian flag, the flatbread pizza was a hit with the queen and even named after her.</p>
<p>A flatbread is usually made of flour, water and salt. But perhaps it’s best quality is that it can be customized to satisfy any and every eater. The extra cheese-er, the extra pepperoni and sausage guy, the gluten free eater and the vegetarian can all find common ground with the same dish: a flatbread pizza. You can even infuse the flatbread with wine by using the yeast leftover from fermentation. Can’t decide between flatbread pizza and a burger, no problem. A flatbread’s triangular shape makes it a great appetizer for sharing.</p>
<p>At <strong>Rockit Burger Bar</strong>, they stick to the traditional and best way to cook a flatbread pizza, via a wood-burning oven. The wood-burning oven gives a flatbread pizza eater that authentic Italian flavor, making each bite more savory and delicious. The freshness of the basil can be tasted on each bite of the Margherita flatbread, and its eater will understand why it became Queen Margherita’s favorite. On the BBQ Pork flatbread, the applewood smoked bacon and cheddar jack perfectly compliment the sweet and tangy bbq flavor.</p>
<p>So whether your taste buds prefer traditional (<strong>Margherita</strong>), creative (<strong>Veggie</strong>, <strong>BBQ Pork</strong>) or unique (<strong>Truffle Mushroom</strong>), Rockit Burger Bar has a flatbread pizza for every mood.</p>

				<content:encoded><![CDATA[<p>Heading into this season, we really wanted to ramp up our craft beer game. We knew we already had a good selection, but it wasn’t anything we wanted to call our “craft beer menu”. So during the off-season, we did a lot of tasting–and we mean, A LOT. We wanted to bring in extremely unique beers, cult classics and truly outstanding local creations, but also needed them to compliment our burger flavors and accompany our tasty whisky menu.</p>
<p>Ultimately, we were able to triple our original craft beer menu from 8 craft brews to 24 and really take the selections to that next level. The new beers range from light–like the locally brewed <i>Metropolitan Krankshaft</i>–to dark–like the <i>Left Hand Nitro Milk Stout</i> and the <i>Great Lakes Edmund Fitzgerald Porter</i>. An awesomely unique beer that stands out in my mind is the <i>O’Fallon’s Hemp Hop Rye</i>, which is brewed with rye instead of barley and hemp seeds.</p>
<p>Still, you can’t forget about our local brews that are on the list including Two Brother’s Brews <i>Domaine DuPage</i>, their gluten free option <i>Prairie Path Ale</i> and then <i>Half-Acre Daisy Cutter</i>. We also have a few beers from across Lake Michigan like <i>Bell’s Two Hearted</i> and <i>Oberon</i>.</p>
<p>All in all, I really feel you should come and check out our tasty burgers and see what beers you think pair best with them! See you soon!</p>

				<content:encoded><![CDATA[<p>Yes, I consciously put that absurd title together and did so for good reason. As someone who grew up with a distaste for mayonnaise (and in all honesty, I’m still not the biggest fan of your typical, store-bought mayo to this day) I was recently introduced to Rockit Burger Bar’s selection of gourmet, homemade aiolis. Since then, I’ve officially become a superfan!</p>
<p>I’ve been lucky enough to become quite familiar with the amazing burgers that Rockit Burger Bar has to offer—from the over-indulgence and comfort of the MacDaddy, to the amazing flavor profile of the Johnny Apple, to the good ole’ classic Rockit Burger—I’ve savored (and devoured) them all. While checking out their weekly Saturday night promotion, #BurgerLab, I was given the opportunity to construct my own gourmet, deluxe burger. Fortunately, my server was a fantastic #BurgerLab tour guide and started with a selection of aiolis which we then got to taste… and then fell madly in love with.</p>
<p>Let me share a few of the highlights:</p>
<p>•	<strong>Truffle Crème Fraiche:</strong> A bonkers blend of crème fraiche, truffle oil and just the right amount freshly chopped herbs. No surprise that this paired well with Rockit’s signature truffle fries, but it also tasted great with mushrooms &#038; gruyere.<br />
•	<strong>Jalapeno Aioli:</strong> I enjoy adding a bit of heat to any dish and this aioli provides just that while still being packed with amazing flavor! Featuring a hint of tobacco and finely chopped cilantro in the mix—this aioli tastes unbelievable with our Rockit Poppers.<br />
